Annie's Angel Hair Pasta Dish

Serves 4

Cheese Department Manager Annie MacDonald makes this dish when she “wants dinner fast—everything comes together in a few minutes, and it is absolutely delicious.”

11/4cups whole milk or 1 cup half and half
1/2cup crumbled feta cheese
3 cups broccoli florets
Red pepper flakes (optional)
1 lb. angel hair pasta
Freshly ground black pepper, to taste

Bring a large pot of salted water to a boil. Place broccoli and a pinch of red pepper flakes (if using) in a steamer basket over a separate pan of boiling water. Cover and steam until the broccoli is crisp tender; about 4 minutes.

In a saucepan, combine milk or half and half and feta cheese. Heat through, stirring occasionally, until the sauce thickens and only a few small pieces of feta remain.

Add pasta to the boiling salted water and cook two minutes. Drain pasta and divide into four warm bowls. Drain broccoli and divide over pasta. Pour feta sauce over all. Sprinkle each serving with freshly ground black pepper and serve.
