In contrast to gluten-free flours and mixes, we’ll begin with whole grains and legumes to prepare fabulously tasty and nutritious gluten-free baked goods. Not only is this a more economical way to live gluten-free, the foods prepared in this way are better for you, easier to digest, and are more similar in texture and flavor to traditional baked goods. We will prepare pancakes, muffins, bread and cake with this simple two-step process and learn how to generalize it to other recipes.
Kim Wilson has spent over 12 years developing healthful recipes, has several published cookbooks, and most recently has focused her energy on developing whole, natural gluten-free recipes. Kim considers cost, nutritional value, and availability in the selection of her staple ingredients. She hopes that on the other side of her class, you might be able to declare along with her, “What’s the big deal?!
