This low-fat, nutritious quick
bread will spice up any lunch box.
1/3 cup raisins
Hot water to cover
1 cup whole-wheat flour
1 cup all-purpose flour
1 cup rolled oats
4 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. ground ginger
1/2 tsp. baking soda
1/4 tsp. salt, if desired
1 egg
1/2 cup packed brown sugar
3/4 cup applesauce
1/2 cup soy milk
2 Tbs. canola or vegetable oil
Preheat oven to 350ºF. Place
the raisins in a small bowl. Add the hot water to cover, and let
raisins soak while you prepare the remaining ingredients. In a large
bowl, combine flours, oats, baking powder, cinnamon, ginger, soda
and salt. In a medium bowl, beat together the egg, brown sugar,
applesauce, soymilk, and oil until they are well blended. Drain
the raisins, stir them into the applesauce mixture, and then add
this mixture to the flour mixture, stirring the ingredients just
to moisten them. Pour the batter into a greased 9×5×3-inch loaf
pan. Bake 50-60 minutes or until a pick inserted in the center of
the loaf comes out clean. Let the bread cool in the pan for 10 minutes
and then turn it out onto a rack to cool completely.
