Asian Greens with Shiitakes and Star Fruit

Makes 6 servings

Vinaigrette:
1/3 cup rice wine vinegar
2 Tbs. dark sesame oil
1 Tbs. soy sauce
1 Tbs. brown sugar

Salad:
3 cups baby spinach or tatsoi
3 cups watercress, stemmed
2 cups sliced baby bok choy
2 tsp. vegetable oil
4 oz. shiitake mushrooms, stems discarded, caps sliced
2 star fruit, sliced about 1/4-inch thick

In a small bowl whisk together all ingredients for vinaigrette.

In a large bowl toss together spinach, watercress, bok choy, and half of the vinaigrette; set aside.

Heat a large saute pan over high heat until very hot. Add oil and mushrooms and cook until mushrooms begin to release juices, about 3 minutes. Add star fruit and remaining vinaigrette, and continue cooking, stirring often, until star fruit is warmed through and most of the vinaigrette has evaporated.

To serve, divide greens between 6 plates and top with warm mushrooms and star fruit.
