Salad Dressing
Meat: 2 8-oz. Beef
Florentines
Prepared Foods:
1 lb. Roasted Sweet Potatoes
Bakery: 1 loaf
crusty bread
Produce: 1 pint
cherry tomatoes, 1 package tossed salad mix
Wine: Cecchi Sangiovese

40 minutes ahead:
Preheat oven to 350ºF. Place Florentines on a baking sheet and bake
30 minutes.
30 minutes ahead:
Rinse cherry tomatoes. Place half the tomatoes in a bowl with packaged
salad mix. Place potatoes in an ovenproof dish and cover with foil. Wrap
bread in foil.
20 minutes ahead:
Place potatoes in the oven to heat through.
10 minutes ahead:
Remove Florentines from oven and let rest, covered, for ten minutes. Place
bread in the oven. Open the wine.
Dinners ready!
Toss salad with bottled dressing. Slice Florentines in half. Remove bread
and potatoes from oven and serve.

Salad is such an easy way to boost your veggie intake. Each cup of leafy
greens is a serving, and each 1/2 cup of cherry tomatoes adds another.
Sweet potatoes are an excellent source of vitamin C and of vitamin A as
beta-carotene.
