Carnitas with Chipotle Chilies

Serves 8

1 pork tenderloin (1-1&1/2 lbs.)

1/2 cup flour

1 tsp. cumin

1 tsp. salt

2 Tbs. peanut or other light oil

8-l6 oz. orange juice

1 oz. Chipotle chilies in adobo sauce

1/4 cup finely chopped fresh cilantro

1 orange, sliced

Slice pork tenderloin
thinly on bias to maximize tenderness, slice rounds in half if tenderloin
is large. In a shallow bowl, combine flour, cumin, and salt. Dredge pork
pieces in flour mixture. Heat oil in a large skillet over high heat. Sear
pork slices on each side. Add orange juice, lower the heat, and cook until
orange juice is reduced by half. Stir in chipotles, and simmer to combine
flavors.

Garnish with cilantro and sliced oranges.
