Chicken, Avocado, and Papaya Salad

Serves 6

3 whole boneless, skinless chicken breasts (6 halves), poached
2 ripe papayas, peeled and thinly sliced
2 ripe avocados, peeled and thinly sliced
1/3 cup fresh lime juice
3/4 cup walnut oil
Finely grated zest of 1 lime
Salt and freshly cracked black pepper, to taste
1/2 cup coarsely chopped walnuts
1/2 cup watercress leaves

Slice chicken diagonally into thin slices. On 6 individual salad plates, alternate slices of papaya, chicken, and avocado. Whisk the lime juice, oil, lime zest, salt, and pepper to taste together in a mixing bowl. Spoon the dressing over each salad and then sprinkle with the walnuts and watercress leaves. Serve immediately.
