Crispy Corn Fritters

Makes 12 fritters

Serve with yogurt or a mild red cocktail sauce.

1/2 cup all-purpose flour
1/2 tsp. salt
1/2 tsp. baking powder
1/4 cup low-fat milk
1 large egg, lightly beaten
2 cups fresh or frozen corn kernels
Vegetable oil

Preheat the oven to 200 degrees. In a large bowl, sift the flour, salt, and
baking powder. Add the milk and whisk until smooth. Beat in the egg and gently
mix in the corn.

In a large skillet, heat about 1/4 inch of oil over moderately high heat. Drop
2 to 3 tablespoons of batter into the hot oil and fry about 3 minutes on each
side, until golden brown. Drain on paper towels and keep warm in the oven.
