Throw this together in the morning before you leave for work.
4 oz. bacon, diced
1 large onion, diced
2 carrots, thinly sliced
3 stalks celery with leaves, thinly sliced
1 Tbs. fresh parsley
28 oz. can diced tomatoes
1 1/2 tsp. salt
Freshly ground black pepper, to taste
1 bay leaf
1 tsp. dried thyme
3 medium potatoes, diced
3 cans (6 to 7 oz. each) minced clams with juice
8 oz. clam juice
In a small skillet,
sauté diced bacon until crispy. Transfer bacon to 3 1/2-quart (or
larger) crockpot. Add remaining ingredients to the crockpot; and stir
to blend. Cover and cook on low for 8 to 10 hours. Serve with crackers.
