A great make-ahead dish for your South-of-the-border party! Use the salsa "hotness" of your choice.
1 Tbs. olive oil
1 Vidalia onion, diced
1 red pepper, diced
1 yellow pepper, diced
1 tsp. ground cumin
1 tsp. chili powder
1 cup frozen corn
1/2 cup salsa
1 can refried beans
2 cups shredded cheddar cheese
5 8-inch tortillas
Sour cream
Spray an 8-inch cake pan with cooking spray. Preheat oven to 350ºF.
In a large skillet, heat oil over medium heat. Add onions and sauté 10 minutes. Add peppers, cumin, and chili powder, and cook 5 minutes more. Add corn and salsa. Remove from heat.
Place one tortilla in pan. Spread 1/2 cup refried beans onto tortilla. Top with 1/4 cup cheddar cheese. Place another tortilla on top. Spread one third of the vegetable mix and 1/4 cup cheddar cheese. Repeat layers with remaining tortillas. Sprinkle with remaining cheese.
Bake about 20 minutes until golden. Cut into wedges and serve, topped with a dollop of sour cream.
