Prosciutto ham has been seasoned, salt-cured, and dried, but not smoked. The meat is pressed to give it a firm, dense texture. Here is the classic Italian first course combination.
8 ripe fresh figs
16 paper-thin slices Prosciutto di Parma
Lemon or lime wedges
Roll or fold the prosciutto slices and arrange them on a serving plate. Slice the figs lengthwise. Arrange the figs and lemon wedges around or over the prosciutto.
