Gajar Halwa

Serves 6

Gajar Halwa is an
Indian carrot pudding that may remind you of another dessert vegetable
preparation—pumpkin pie.

6 carrots, finely
grated
3 cups milk
1 cup sugar
1/2 cup powdered milk
3 tsp. ricotta cheese
1/4 cup ghee (clarified butter)
or unsalted butter
Seeds from 5 cardamom pods,
pods removed, seeds finely
chopped
2 Tbs. chopped almonds
2 Tbs. finely chopped
pistachios
1 tsp. raisins
1 cup cream

In a saucepan, cook
and stir the carrots in the milk over low heat until carrots are tender.

Drain any excess milk
and add powdered milk, ricotta cheese, and sugar to the carrots.

Heat the ghee in a
frying pan, add the carrot mixture, and cook over high heat until the
carrot paste loses the milky texture and becomes golden brown and the
sugar is dissolved.

Stir in cardamom,
almonds, pistachios, and raisins. Serve Gajar Halwah hot or chilled with
cream on the side.
