Grilled Pizza

Shopping List for Four

Grocery: 2 oz tin
anchovies, 1 jar bruschetta topping
Produce: 3 cups
baby spinach, Fresh basil, Watermelon
Dairy: 1 Flamin’
Red’s Pizza Crust
Cheese: 3-4 oz.
goat cheese
Wine: Banfi Col
di Sasso Red

20 minutes ahead:
Prepare grill to medium heat. Brush both sides of crust with olive oil.
Smear goat cheese over one side of the crust. Dot pizza with small pieces
of anchovy (if desired). Add bruschetta topping, top with torn spinach
and basil. Drizzle pizza with olive oil. Grill pizza until cheese melts
and pizza crust starts to bubble.

Dinner’s Ready!
Serve pizza with sliced watermelon.

Goat cheese is slightly lower in calories and fat than hard cheese and
one ounce of spreadable, rich-tasting goat cheese goes a long way.
Each half-cup of bruschetta or spinach is a delicious serving from
the vegetable group.
