PFD: 4 servings
of Black Bean Torta, 2 cups Three-Rice Walnut Salad
Grocery: Olive
oil
Bulk: 2 teaspoons
sesame seeds
Bakery: 1 small
loaf Italian bread
Cheese: 4 oz. Jarlsberg
Cheese

Preheat oven to 350
degrees F.

15 minutes ahead:
Slice the Italian bread length-wise. Shred the cheese. Place the bread
on a cookie sheet and brush the tops of each slice with olive oil. Sprinkle
the shredded cheese and sesame seeds over the slices. Toast in the oven
5-8 minutes or until the cheese is bubbly and seeds begin to brown. Once
the bread has toasted, reduce heat to low (200-250 degrees F) and remove
the bread.

5 minutes ahead: Wrap
the tortas in foil and place on a cookie sheet in the oven. Heat until
warm.

Dinner’s ready:
Serve tortas with Three-Rice Walnut salad and Toasted Sesame Cheese Bread.

The brown and wild rices, walnuts, and dried fruit in the salad and the
black beans in the torta are all good choices for a heart-healthy meal.
Using Jarlsberg lite is a nearly undetectable way to lower the fat content
of the meal. Choose a bread that lists whole wheat as the first ingredient
for more nutrition.
