Makes approximately 30 canapés
1 Tbs. chopped fresh herbs, such as basil, dill, parsley
1 Tbs. minced shallots
1 clove garlic, minced
1 pkg. Boursin or boursin-style cheese
2 Tbs. butter, softened
4 oz. cream cheese, softened
½ lb. thinly sliced rare roast beef
Combine all ingredients except roast beef. Spread 1 generous tablespoon of mixture on each slice of beef. Roll up and cut crosswise into thirds and secure each with a toothpick.
These can be prepared ahead and stored tightly wrapped in the refrigerator.
